One of Czech tradition meals is the fried cauliflower served with boiled potatoes and tartar sauce. But I can not even remember when I prepared it for the last time.
I was craving curry. Like the one my friend Slávka (which translates as “Mussel” from Czech) made for me, with prawns and Brussels sprouts. After procuring the recipe, I wanted to cook it immediately, but I didn’t have any of the curry paste, galangal, or lemongrass that the recipe called for! So I cooked intuitively, feeling my own way along.
While working on my latest cookbook – Coffee Man, Cinnamon Girl: The Cookbook – I stumbled across an interesting recipe on the internet. It claimed to be Panamanian, but none of my Panamanian friends were familiar with it. Nevertheless, I tried it out, and it turned out to be very good!
