The current heatwave reminds me of last summer’s temperatures in Sri Lanka. I remember how we trundled into a farm where they made palm honey, cooking palm tree sap until thick. It was dark and mildly sweet. Suddenly, an older woman emerged out of the kitchen, carrying a tray with a beverage in a misty glass. As soon as I downed it, I dropped my jaw and asked if I could have more. This cilantro drink is not only refreshing, but also beneficial if you have digestive problems. Oh, and don’t be alarmed by the amount of cilantro it requires, that’s really how much you’ll need!
Refreshing Cilantro Drink
Preparation 30 min. + chilling
125g cilantro seeds
2tbsp palm honey or sugar (you can use instead normal honey)
Pour water in a pot. Add cilantro seeds and bring to boil. Boil covered on medium heat for 30 minutes.
Strain and taste with palm honey. Leave it to cool down and then chill at least for 2 hours or overnight.
Serve it with ice.
